Abstract: This article reports a measurement of the amount of 18 different kinds of amino acids （glutamic acid,aspartic acid,lysine,leucine, arginine,alanine,glycine,valine,isolcucine,threonine,phenylalanine, serine,proline,tyrosine,methionine,histidine,cystine and tryptophan） in the muscle of Epinephelus maculatus and E.awoara.The results of the measurement indicate that,the amount of amino acids in the muscle of the above grouper is comparably high.The total amoumt is 764. 98mg/g and 743.78mg/g respectively.The amount of the 8 essential amino acids for human body together account for 40.87% and 41.99% of the total amount of the amino acids in the muscle of these two groupers. The amount of the five tasty amino acids （glutamic acid,aspartic acid, grginine ,alanine and glycine ） together account for 45.03% and 44.3% of the total amount of the amino acids.The ratio of the amount of the essential amino acids in the muscle of grouper is close to the component formula of essential amino acids for human body.Therefore,The flesh of grouper is a protain of delicious tasteand higher nutritonal value as well.This article reports the component formula of essential amino acids of grouper.
